Yes, I made all those. All 254 pieces and 7 layers. And how long did it take? About 2 and half hours collectively. Was it tedious? Um, yes, but that is the life of a caterer. I love what I do because no event is the same and the menus vary so much from day-to-day. The days I do find difficult though are the ones where there is a lot of repetition, days like today when I must make a superb display of teeny, tiny, oh so very cute, perfectly one bite, salmon crepe roulades. And how long did it take the guests to consume these petite bites of deliciousness? All of 20 minutes. I guess I will take that as a compliment!
